Homemade Pineapple Buns

Hello :-) I've been wanting to make this recipe for a long time now, and it's finally done :-) As I explained in the video, pineapple buns are basically enriched dough (ie. plain dough with added eggs, fats, or sugar, or AOTA) with a cookie crust on top. No pineapples involved. It's just the appearance that resembles a 🍍. This recipe is pretty easy to make, and bread dough is always satisfying to work with :-) It has all the elements I love about baking: something looking pallid and unappetizing magically turns into golden-brown and delicious treats.

Homemade Pineapple Bun Recipe:

Bread Dough:

330 g bread flour
35 g sugar
25 g milk powder
4 g instant yeast
200 g milk
1 egg yolk
35 g unsalted butter
7 g salt

Cookie Dough:

35 g butter (preferably unsalted)
50 g sugar
85 g flour
1 egg yolk
3 g baking powder (~1/2 tsp)
1 g baking soda (~1/4 tsp)
2 g vanilla extract (~1/2 tsp)

Makes 25 mini buns

1. Start making the dough first: Let yeast bloom in room temperature milk for several minutes. Then add to mixing bowl along with flour, sugar, milk powder, and egg yolk. Mix on medium until most of the flour has been incorporated and nothing will fly out. Then mix on high speed for 6-8 minutes.
2. Add butter and salt, and continue to mix on medium until all butter has been mixed in. Scrape the bowl intermittently to help the butter mix in.
3. Shape dough into a ball and let sit, loosely covered with a damp cloth or plastic bag on the table for about 1 hour to rise.
4. In the meantime, make the cookie dough: Cream butter and sugar together until smooth. Then add egg yolk and vanilla extract. Finally, add flour, baking powder, and baking soda and mix to form even dough.
5. Roll cookie dough into a log roughly 2 cm diameter, wrap in cling film, and set aside to rest.
6. After the dough has had time to rise, divide into 15 g portions, and shape into spheres. Set aside, loosely covered.
<this is a good time to preheat the oven to 350F/180C>
7. Divide the cookie log into 25 even portions. Press one portion over the top of each bread dough ball.
8. Line on a baking sheet and brush with egg wash made with 1 egg yolk and 1 tbsp of milk or water.
9. Bake for roughly 20 minutes or until crust becomes golden brown.
