Recipe for Blueberry Macaroons
Hello! :-) Happy new year! Hope 2018 has been wonderful to everyone so far. Since we're still in January, the enthusiasm to achieve our New Year's resolutions should still be thriving, right? It's the effort that counts anyway I guess. So, here's a recipe for a cookie that's got some healthy elements to it, but is also a bit of a decadent treat too.
I was told that breakfast is the meal to have your sweet treats, so this cookie would make a good breakfast :-)
- Juice of 1 lime (~3 tbsp)
- 25 g sugar
- 30 g white chocolate
- 100 g sugar
- 3 eggs
- 120 g unsweetened dessicated coconut
- 200 g oat flour (or quick-cook oats)
- 1/2 tsp (~1g) salt
- 1/2 tsp (~2 g) vanilla extract or paste
Tools: Ice-cream scoop

Blueberry sauce:
- 170 g (~1cup) fresh or frozen blueberries- Juice of 1 lime (~3 tbsp)
- 25 g sugar
Macaroon dough
- 40 g butter- 30 g white chocolate
- 100 g sugar
- 3 eggs
- 120 g unsweetened dessicated coconut
- 200 g oat flour (or quick-cook oats)
- 1/2 tsp (~1g) salt
- 1/2 tsp (~2 g) vanilla extract or paste
Tools: Ice-cream scoop
