Red Bean Cookies

Don't you just love it when one holiday comes after another? As a student, I must say, this does make me happy. Even though there's no official holiday for Lunar New Year, just hearing the festive jingles and seeing the vibrant red and gold decorations being don on store fronts is the perfect medicine to the Christmas/New Years-holiday-withdrawal. It's time to get right into the other new year celebration!

Sweets and cookies should never be in short supply over new years, so here's another cookie recipe:

Red Bean Cookie

40 g unsalted butter
40 g icing sugar
30 g (2 tbsp) milk
1 tsp vanilla extract
100 g flour (all-purpose fine; barley flour used)
4 g baking powder
60 g red bean paste (video on how to make: https://youtu.be/Ka_aawENsl8 , or can be found in Asian grocery stores)
pinch of salt
Egg wash (optional)

Combine room temperature butter and sugar together first. Add milk, vanilla extract and salt. Stir in red bean paste. Finally, add flour and baking powder together and combine into a soft dough. Roll into a log and freeze or refrigerate until firm.

Slice into 0.5 cm (~1/4") rounds, arrange on a lined baking tray, brush with egg wash (optional), and bake for 12-15 minutes at 175 C (350 F).
