Homemade Pumpkin Tuiles

A new recipe for the cookie collection :-) I have a couple more fun recipes coming up, but we'll see how long it takes for me to get the clips edited and uploaded. Now that school has started again, free time is much more scarce...though study breaks are always welcome...

Pumpkin Tuiles Recipe

60 g unsalted butter
60 g icing sugar (AKA powdered sugar, or confectioner's sugar)
50 g barley flour (use 60 g for plain flavour)
60 g egg whites (about 2 large egg whites)
5 g milk powder
5 g pumpkin powder (flavours half the recipe)
5 g purple potato powder (flavours the other half of the recipe)
5 g vanilla extract
1 g table salt
Optional: dark chocolate, for dipping

1. Cream butter and icing sugar together.
2. Add egg whites, vanilla extract, and salt. Stir.
3. Add the rest of the ingredients (either one of the flavouring powders), and stir to make an even batter.
4. Let the batter rest in the fridge for at least 15 minutes.
5. On a baking sheet lined with silicone or teflon liner, spread using the templates and bake at 325F/160C for 8-12 minutes. Cookies should be crisp after cooling. If they're still pliable, put back into oven for 2-3 minute intervals until they become crisp.
6. You can shape cookies around the handle of a wooden spoon when they are hot out of the oven if you wish, and dip in chocolate.

Variations:

1. Plain flavour: Omit pumpkin and purple potato powder, and use a total of 60 g barley flour instead.
2. Other flavours: If you don't have pumpkin powder, you can add other powders like matcha (green tea) powder, cocoa powder, crushed freeze-dried fruits, black sesame powder instead. If you're adding spices like cinnamon (in which case you'd only add ~1g or so), use the plain recipe, and add the spice.

Note about pumpkin and purple potato powder: If there is an Asian grocery store near you (eg. T&T), you might be able to find these in store in smaller packages.
