Valentine’s Day Macarons

Hello :-) Sweet stuff is always welcome around Valentine's Day, right? Here's a recipe for macarons that are a little different. They're coloured and flavoured with raspberries, and piped into a caterpillar.

The Recipe:

1/2 cup raspberries

85 g icing sugar

65 g almond flour

50 g egg whites

40 g granulated sugar

pinch of salt

Fillings: 

1. 2 g matcha pwd + 40 g heavy cream (35%mf) + 45 g white chocolate

  OR

2. 40 g heavy cream (35%mf) + 40 g dark chocolate

Decoration: 

1. 2 g dark chocolate

 OR

2. 1 g matcha powder + couple drops water
